What is the difference?

Getting the Green or the Black will make no difference in games; not sure why he mentions gaming. It's a storage drive so speed is not terribly important, but Black drives are more expensive, faster (7200 rpm vs 5400 rpm), and more reliable. If you want reliability, though, I'd stick with 1TB drives.

You don't need to spend anywhere near 2000 GBP to max all current games at 1080p (one monitor at industry standard resolution). You'd need to spend more if you wanted to max everything with a triple monitor setup or on a higher-resolution single monitor (like 2560x1440), though. So what do you want to do? Single monitor? Triple monitor? Super high-res monitor?

You have more than enough money to throw in a 3570k and a 7970 which have the power to max most games at a playable FPS on that native resolution.

This is more than good enough for everything max settings at 2560x1440. You can even spend less and you might not like the looks of the CPU cooler or case. Two 7970s will make your wildest dreams come true. I've left room for high-end peripherals as well. I need input from you, though, I don't like recommending so many parts I have to assume you'll like!
