Hey I just got to up the price. I will need a keyboard and monitor. 1080p is sufficient but you can do 1440p.

On this i also included an extra case fan to intake through the bottom, you dont need a fan controller because there is a fan hub in the case that can control up to 6 fans with it. You'll need to use the cpu fan header for it to work properly. The fan included is a high cfm 140mm fan so with that and the one that comes with the case that provides another 100cfm's there should be no problem with airflow

Do you think I should wait for the Ryzen CPU's first instead as well as the 1080ti??

If you're going to wait for the 1080Ti/Vega, then yeah it's worth waiting to see performance numbers for Ryzen IMO, since Ryzen will release before the 1080Ti and Vega. That being said, if you do decide to get a 1080Ti or Vega equivalent, you'll most likely have to drop the CPU down to an i5(or Ryzen equivalent) and make some other changes to get the higher end GPU in budget.

Well I'm planning to play Triple A titles and make let's play/walkthroughs of them. Sometimes stream, editing and such. Do you think I should just up my price a bit and get a MSI 1080 instead of the 1070 for this? I'm planning to make sure I don't get high frame drops.

Nah, GTX 1080 is a waste of money. It's a mid ranged-high end GPU for enthusiast pricing. A single GTX 1070 will be fine for AAA titles at 1440p anyway, so if you want to build now, go with the 6700k and GTX 1070. If you want to wait, Ryzen and 1080Ti/Vega could be a good option, but they are still a good 2+ months away.

I'm doing my room set-up currently and getting [ Register or Signin to view external links. ] . Do you think I should get some LED's for it, and which colours? Sorry that it's a corner desk by the way, room's not the biggest haha.

You could probably buy a cheap 2m RGB LED strip and run it behind the desk to light everything up a little. That's what I done on my desk. If you want case lighting, I'd probably just grab an NZXT Hue+ for ease of use. Yeah, Enthoo EVOLV ATX is a beautiful case IMO. More of an enthusiast level case, whereas the Enthoo Pro is high end budget/entry level enthusiast.
Also, if you haven't got that desk, I would maybe not advise that. You could probably pull off something better if you built it yourself. Like one of these;

or maybe 2 of these in a corner;

and you can buy legs or drawers to hold the desk(s) up. I bought 2x2m table tops, use one as a back to the desk and one for my table top, and then used two sets of drawers instead of legs to hold it up.
