I have a basic mod menu patch which I want to use with my Falcon JTAG, how would I go about editing the mod menu text and functions like:

Rank options
Visions
Achievements
God mode
XP

and putting the mod menu into my JTAG to use on-line.

Use FF Viewer. It depends on which mod menu you have. They all varie. What menu do you have ?

You have to edit the patch in .ff viewer its not that hard.

It just takes time and patience.
