I have a Level 21 Paladin Blood Elf, I normally just tank. What Professions are best for me

For tanking,
Blacksmithing, Leatherworking, Enchanting and Mining will all give you about 60 bonus stamina.
Engineering gives bonus armor, and is comparable to the others. Inscribing is weaker because the inscriber-only bonus boosts defense rating, which is usually less desirable than straight stamina.
Tailoring, Herbalism and Skinning are worthless.

This is good for the bonus's. But not really for what they do.
Black smithing and mining for you I would say, you can make great gear at 85 and you DO get good bonus's. If you want a lot of money, take Herbalism and Mining, then Auction everything off. (or Jewelcrafting for money, then AH off the gems)

As Dean said, if you going to be using plate and tanking. Learn blacksmithing and mining, you can make armor that is useful for you. When your in the 80's mining makes a lot of gold.

I went with mining and jewelcrafting with my tank pally. That was I was able to make my own gems especially at high levels, because you upgrade your gear fairly quick with new stuff, then you need new gems.
After I maxed my jewelcrafting and mining, and made quite a bit of gold in the AH, I decided to drop mining and pick up blacksmithing.
I noticed at 85, you can't really make a lot of things, because people would rather have gear drop or buy them with JP/VP, and the mats are super expensive on some realms.
I went with Blacksmith for just because I can socket my bracers and gloves, and jewelcrafting cuz I can make Jeweler gems, which are awesome.
If you end up not liking blacksmithing, you can always opt for enchanting which makes BIG money too. And you can enchant your rings with them.

I wouldn't say skinning since skinning gives crit which is worthless for a tank.
Enchanting would be good though since it can give you +40 stamina on both of your rings. So you will get +80 stamina just for getting enchanting to 475. Although it is expensive to level but can vary from server to server.
