Text tutorial:

1. Go to 'My Soldier' from the main menu. Hover over 'My Dog Tag'
2. Select 'My Dog Tag' and spam RB (R1 on PS3) until the tags show up. This will take a few tries.
3. If you did it correctly, your right dog tag at the bottom will be lit up.
4. Select what dog tag you want, hit B (O on PS3) and you'll see what dog tag you have selected.

Notable Dog tags I've found:

For the Colonel rank 100 tag, select the Handgun Proficiency dog tag, and hit B. You should now have the GOLD Colonel 5-star Dog Tag. Yes, the tag is gold. It looks sexy.
For the DICE Dev team Dog Tag, select the Scout Helicoptet Proficiency Dog tag. I don't have the dog tag, so I don't know what it looks like.
