you dont need to have a theatherd already for iphone 3gs i can confirm that i have done it all you need is redsonw and you jailbreak it

No one said you do have to have it tethered first
However if you allready have a tethered device you can just install a package from cydia instead of having to do redsnow, which takes longer

I would advise backing up to iTunes aswell, as apps and some other stuff don't sync to iCloud
But to get the stuff that is synced to iCloud you would sign in with your apple ID and your device would download it.

If you follow the instructions you should be fine, just make sure you dont download dodgy things from cydia.
If something does happen though you can always DFU restore. Just make sure you backup to iTunes before jailbreaking
