erm, im pretty sure that on creative one of the function keys does it, but idk.

download too many items 1.0.0 and there is an option to disable night time on the top left in your inventory.

if you wana play minecraft like this you can play @ my server its a proper server with 100% uptime, you have the command to change day/night, but apart from that theres not much you can do; its easy to make your own server and do it from there.
