Ive been modding for quite a while (But I've been taking a break from it cause i've been busy). I dont know much about JTAG's because I havent read anything about them, but I will soon. But just a quick question and im pretty sure its a pretty noob question but, After an xbox is Jtag'd, is it possible to Un-Jtag it?

Yes, but if you want something that you can just switch between jtag and retail. Look into an RGH with a cygnos chip installed. It allows you to switch between nands at the flip of a switch.

Yes you can you can Jtag your xbox on a lower 7371 dash then write xell get the cpu key the make your freeboot flash it. have a jtag then you can just write your original nand dump back and you can turn it back into a normall xbox 360

Yes. Simply unsolder the bridges for the jtag connection and write your original nand back to it.

Yeah, it is just doing the reverse of jtagging it. I suggest getting a RGH so you can go from jtag to regular.
RGH= Reset Glitch Hack (Look it up if you are interested)
