All it is is vaporized oxygen high up in the clouds, when cold air gets super heated (by the jet engines) it turns into a gas. i failed chemistry and even i know this.. :facepalm:

They are called vapour trails. The cold thin air high above reacts with the heat of the engines there for creating vapour and moisture. Although planes aren't meant too but some planes empty there sewage tanks in mid air. Don't believe me? Watch Mythbusters...
