If nothing is wrong with the disc or drive then I'm 100% sure it has something to do with XEXmenu. XEXmenu is the worst program you can use to manually install games with even though I've never had problems with it. The issue you've got there is a common issue with xexmenu. Brand new consoles with brand new drives experience that. You're installing the game and suddenly the download bars disappear.
Anyway, do this:
Put disc in, launch FSD, go to file manager, find the drive folder and press A. The files to the game should come up. Then copy all of those files to a folder in HDD1 and wait for them to be finished. ;)

It could be caused by scratches, while installing once it goes to a file and its scratched, it completely stops. mine does that so im making a backup or buying a new disc.

Every dvd drive has a dvd key. Every xbox has to have a certain drive attached to it via the same dvd key.
Putting in a new drive won't work unless you get the dvd key from the new drive. Can be done via flashing the drive.

Well as you can see it reads the game and installs it, but stops which means that the keys have been swapped though.

You should try downloading the ISO from the web and extracting it than FTP it to your HDD. Will save you the hassle of fixing the drive since you seem mad
How big is the HDD? Ive had a HDD that says there is room but it needed to be formatted again for the game to fully copy

Ok first off did you flash the new dvd drive with your dvd key for that xbox? next, did you use the proper Iextreme or original firmware? Now last but not least, will the game play from the NXE dash? if so, you have the right key, and everything is cool. You may need to boost that laser for a good game read. It could be dieing or simply just dirty. If you are sure you have the right dvd key and the game will play from the NXE dash then its something to do with XEX menu, the dvd drive laser itself, or the game is scratched and XEX cant load and store the data. good luck
