For starting off practise in the arena running different directions and memorising a few useful skills.
The way I play fifa is a I read the defender and then think where I want the ball to go and then do a skill to go in that direction.
Its best to learn mostly the top half of the right analog stick such as step overs and berba spins and mcgeady turns.
A skill that is fun to do and is difficult to time but once you get the timing is easy is the waka waka, do a reverse step over and then move the left analog stick to the direction in which you want to move depending on the way you performed the reverse step over.

best way is to watch tutorials and make it so you can just do skill without thinking about exactly what you have to move on the analog stick, its alot easier when you can just do it automatically
once you know a fair bit of skill, test it out in matches and eventually you will be able to skilll players without barely thinking about it
