Getting an AMD CPU over an Intel i3-2100 for example is terrible choice since FX as a whole is trash. Cross-firing two low end cards at the start is terrible since 1 higher end single video card will not only give you better performance, but it won't occupy to slots, and the power consumption will be less. You also didn't list all the other parts so I can't recommend anything on that. Also, don't post the exact same topic in two different sections, not only is it spam but it makes thing more difficult.

sorry for re-posting, would a Radeon HD 6850 and a Intel Core i5-3570K 3.40 GHz be better choices over the current ones?

Much better choices. Pair that up with a 550w XfX and a MSI Z77 G43 and you'll be set.
