Well, I put Minecraft on my flash drive and went to Horizon, extracted it, and then opened it in Horizon and then I went to contents and it had the .png for cats,endermen, villagers, and so on.It also had the enchantment table .png so that means when they released the game they were already one step ahead so does this mean the new update 1.2 should be comming earlier than expected and instead of updating to 1.7.3 it will jump ahead to 1.2? it probably just means that horizon wasnt sure what all would be in the game so they put everything in the current version on pc

These were applied during the last update about two weeks ago. They did it so they would not have to do so later.

The reason for this is because they used the same coding from pc on the Xbox version.
