Can anyone explain to me what triple NAND is?

A console with a chip allowing it to boot 3 nands.

One nand is a hacked nand which is basically like a JTAG, bot xexmenu and homebrew and stuff.
Another nand would be retail which you can connect to Xbox LIVE with but WITHOUT MODS.
The third nand would probably be a devkit nand which is just a devkit...

You switch between them using a switch soldered into the console.

Only with the unmodded nand which comes from your console. If your console is already banned you need a nand from an unbanned console to go on LIVE.

You can't use xexmenu or anything like that on the unmodded nand though.
