Basically, I want a GPU that can run all games maxed out completely, single monitor setup, with a 1920 x 1080 resolution, also, lots of Vram is a must, preferably 4gb. I have a budget of 500 pounds.
I'm looking at these 3 cards at the moment,

Any recommendations? Any better cards out there?

You don't need a card with more than 2GB's of vRAM for a 1080p resolution. Also, what are your other system specifications? Chances are that if you already have a nice mid range GPU in your system right now, you purchasing a brand new card would not be worth it. I'd grab a slightly overclocked GTX 670 from the factory if I was you, plus...it turns out to be the cheapest GTX 670 on the site.

Having the best $200 CPU out there matched up with a $400 GTX 670 is going to get you superb results and is definitely not going to be outdated any time soon. The difference between the GTX 670 and the GTX 680 is around five to ten percent varying from game to game. By the time games start using more than 2GB's of vRAM at a 1080p resolution, the GTX 670 will no longer be relevant. Your build is solid and the PSU is more than adequate to house any single GPU card out on the market today. It's going to be a huge improvement from your ageing 4870's.
