An alternative CPU would be a 3870K and a $50 Gigabyte FM1 board but that would really limit you to mostly Minecraft since it's not nearly as powerful as a AMD 7770.
It's a different CPU but MC at default only takes advantage of one CPU core so you'd be able to record and game at the same times, especially considering Minecraft is not really intensive.

Your expectations are way too high considering such a small budget for the computer. A build with a 3870K / G550 is going to be extremely slow and unresponsive for heavy duty mutlti-threaded programs like the Adobe suite. Also, I'm not blind and I'm perfectly able to read lower case letters.
