So, if I complete one of those collections and I turn in all the cards for it..Do I get those cards back, because some of them I don't think would be worth it if I don't get my cards back when I turn them in.

No you will get Coins and sometimes a card for completing the collection. Except for the CCM collections you get that card back but you cant trade/auction it

If you mean the new flashback ones then no. Most collections you will get 1 card and coins. Look on the top it will tell you what you get back. They should have waited for the market to go down before releasing collections. Now its not even worth it
