Just wondering how many different parts do you need to build a gaming pc?

Average 8-10, there could be potentially loads more parts involved in water cooling etc.

-Case
-HDD/SDD (Storage device)
-Central Processing Unit (CPU, example: Intel core i5)
-Graphics Processing Unit (GPU)
-Motherboard
-Power supply
-RAM sticks
-An OS
-An optical drive (CD Player/Reader)
That's what you MAINLY need, there are other optional things you can have such as after market heatsink fans, other HDDs (hard drives) or SSDs (Solid State Drive)
-HDD/SDD (Storage device)
-Central Processing Unit (CPU, example: Intel core i5)
-Graphics Processing Unit (GPU)
-Motherboard
-Power supply
-RAM sticks
-An OS
-An optical drive (CD Player/Reader)

If your looking for the bare minimum just to make it able to turn on then you need:
Motherboard
Processor
RAM
Graphics Processor
CD/DVD drive
Hard drive
Power supply
case
Now if you are building a custom one some parts may need a fan/heatsink (some don't come with that) and will have to add those on as well, plus all the other stuff like keyboard, mouse, monitor, Etc if you need those.

You would also need a network card for wireless connection, and sound card for monitor.
