If I was going to fill in the blanks for the hardware you have right now, I'd say it makes sense for there to be two 7970s. If this was intended to be a gaming rig at all, you done goofed, son. A 7870 is going to be out of place in this rig. The power supply is going to be much less efficient than it would be with higher-end hardware as you're putting a comparatively tiny load on it. Way out of its sweet spot.

to tell you the truth, its really not meant to be a hardcore gaming pc, more of graphic design video editing type of thing, however I'm sure there will be a time when I'm gonna get into pc gaming for whatever reason, so two 7970s still?

Those only make sense if you're playing at a very high resolution like 2560 x 1440 or over three 1080p panels in Eyefinity. For 1080p, one 7970 is more than enough. I'm not saying the 7970s are what you should get, but they're what would be appropriate for this rig if it were to be balanced and focused on gaming. The 7870 will do everything you need it to at 1080p. It's just an awkward setup, that's all.
