Get yourself a good CPU cooler like the Enermax ETS-T40-T.B. and overclock that sucker. 1366 i7s are great fun to work with and you're definitely not being held back by your CPU. Your hardware is still relevant, I mean SLI 570s? People are still rocking their Core 2 Quads happily without bottlenecking. Google will get you some great results for overclocking for both your CPU and cards! You could even push your RAM a little.

What you ARE missing is SATA III. An SSD will give you a gigantic performance boost in day-to-day tasks and really make your computer "feel" faster where other hardware can't have an effect. You can still benefit a lot from one even on SATA II, so I'd still recommend one. The 60 GB Intel 330 is only $60 right now on Newegg so that's a good option for you.

Make sure your case has efficient cooling and do you know if others overclocked their hardware? It makes a huge difference as you can almost double performance. Also, it could be, but not very likely, that your hard drive has too slow a write speed to use your hardware to the fullest.
