This is the fastest card I can recommend. The 7750 is the highest-end card that draws all of its power from the PCIe slot, which means you don't need to connect any cables to it. You can remove the normal-profile PCI bracket and the VGA connector and use the low-profile bracket that should be included.

It's a 775 platform, so you're going to be pretty restricted. However, a lot of people still happily rock their Core 2 Quads after "all these years." I'm not sure about pricing on any of these CPUs.

To fit the graphics card, all you have to do is replace the bracket it uses pictured in the Newegg listing with a low-profile one. Notice that there is a small ribbon cable connecting a VGA connector mounted on the large bracket to the card. You will disconnect this to use the low-profile bracket. Then you'll just remove a slot cover, install the card, boot up, and install the drivers.

PCIe 2.0 and 3.0 are backward and forward compatible with each other. 3.0 has a higher maximum bandwidth that no card came take advantage of yet. GDDR5 is a type of high-bandwidth memory used for graphics cards and the type of VRAM used will not affect compatibility. You've got an open PCIe 2.0 slot with x16 bandwidth so the card is compatible.

Newegg ratings mean nothing at all and Sapphire is a reputable brand. I didn't know you were in the UK, though. The cards you linked will not fit in your case because they are normal-profile. You need a low-profile card like one of these.
