Last year, I modded my gamerscore and it got reset a week later. However, it came back last week for a few days and then went back to being reset without me doing anything special. When I check my achievements, I still see all of the achievements completed, although it doesn't count for my gamerscore. It doesn't really matter to me, but I'm curious to find out if there is a way to bypass being "reset".

Once you have been reset, your flagged on Xbox enforcement team. They will check you actively. I would suggest laying low for a while.

There is no way to bypass being reset unless you mod your gamer score back to what is was before it got reset

I don't think you will want to do that since that's what got you there in the first place

No you can't bypass it. Your on a list to be watched to seem if you do it again so you will always be at a low gamerscore now.
