I'll break it down.
Windows 7 was released in 2009. 8 was released, as you know, last year. It therefore had 3 years longer to become a less buggier and more polished operating system. It just feels more complete.
I also find that Windows 8 just isn't suited well at all for desktops - it feels very similar to windows RT (what the surface runs) and as a result, in my opinion, should be a mobile operating system, however for more powerful devices.
I think that Windows 7 is currently the best OS that Microsoft have released, and I'll carry on using it for the next few years. 8 feels too unfinished and rushed, and also, in my view, looks too cartoony.
It's an awesome idea don't get me wrong, I just don't feel as though they've put much effort into it.
My top 3 OS at the moment (in no particular order):
Ubuntu
Windows 7
OS x Lion
They feel the most complete and polished operating systems out there, as well as maintaining the new feel factor.
If you want a retro style OS that performs and is super light, XP SP3 is the best in my opinion. I just prefer the way 7 looks. It's more easily customisable to my tastes:

Very simple and plain looking - just how I like it.
A lot of people find reading text hard. I can read it just fine!

Windows 8 was coded with tablets and mobile platforms HEAVILY in mind, if you're using on a desktop your experience will be severely affected, which is why I'm staying with Windows 7 Ultimate on my main rig.
