The number you get after subtracting the individual digits is always a multiple of 9.
For example :
All single digits will yield 0 as the number
Now lets see for all two digit numbers
10 : 10-1-0=9
11 : 11-1-1=9
12 : 12-1-2=9

20 : 20-2-0=18
21 : 21-2-1=18
22 : 22-2-2=18

30 : 30-3-0=27
31 : 31-3-1=27
As you can see all the numbers you get are all multiples of 9. i.e. 9,18,27,36,.......................and so on
Now here lies the trick, the programmer of that game knows that every time you subtract the digits from the number you will get the same numbers, i.e. multiples of nine.
So each time you play it the same items(things) are kept in all the boxes which are numbered as multiples of nine(including 0).
And no matter what number you choose the game knows that you will get that items as it also knows what number you get(0,9,18,....) and also knows the corresponding items too(as it has placed those).
And also every time you play the game again, i.e. when you start over, the game places different items in the boxes containing multiples of 9.
So you get a feeling that she is really reading your mind. Whereas what she is doing is just placing certain items in all the boxes of multiples of nine and announcing them at the last.
