No tags won't be reset because your tags are stored on Xbox live, everyone's profiles will be carried over to the Xbox one, You just download it again once you get the new Xbox.

So everybody's profiles will be how they are now.

I haven't even read up about the Xbox One but there is many reason why profiles will simply carry over.
