Most likely do 1 or 2 missions, drive a Sanchez and look for some nice trails or jumps to do and then fly some planes!

Obviously ramp a bicycle off Mt.Chilliad? then try a vehicle to see how damaged it gets then im gonna find myself a cargo plane and fly directly into a busy downtown area in hope of killing many peds
