I really want to just have a YouTube account. No Google+ Or any services other than my youtube.

You need Google + in order to make a YT account I'm 99% sure.but you can change your name have a look on YT.

I have but it is just a pain. I don't understand why GOOGLE+ is necessary.

Neither do I,the thing is if you delete your google plus you can't sign in to YT.So I have like 3+ useless google accounts

If you click your username and click Settings you could unlink your Google+ Account from your Youtube Account.

That only works if you made you account before the google + update.
