its is simple you just press the Y button, yes the yellow one.

If you mean where they are, they spawn at the airport.

Not all planes are flyable only stunt planes and some other ones. Then to fly its just Y or Triangle and then Left and right Analog sticks.

The biggest plane to fly is the Titan, which can be found at the military base or at the one in Sandy Shores...

You can find the Luxor or the Shamal at the main airport.

i go to the airport and no flyable planes are there

You just have to look around for smaller planes.

you can find them at trevors airfield or at the airport
i think you may have to be level 25+ for them to spawn
though
