Hi guys, I'm really confused about my cpu power connection, it is a 4 pin connection but my psu only has 8 pin. It seems like the 8 pin would fit but it would leave 4 pins just to the side..
So what should I do?

You 8 pin motherboard connector splits in 2. Plug 4 in and leave 4 to the side.

The 8pin CPU connector should split into 2 4 pin connectors, if not it is safe to only plug in half as long as no excess stress in been applied to the power connector on the mobo.
BTW what make is the PSU?

It doesn't split into two but the little clip that clicks connectors into place when plugging it into an 8 pin is getting in the way, would it be safe to just break that off considering I'll not be using 8 pin?
And it's a very old cooler master 1000w psu, I literally cannot get any more money to get a new psu..

It should split into two. You might have to slide them apart. If they don't, then you might have to get an adapter or a PSU. If your motherboard only has a 4 pin CPU power connector, you shouldn't be using a 1000W PSU.
