I'm wondering how much wattage I will need. My 760 says it needs 500 minimum but will that be enough or will I need to go with 550W?

You could run a PC with an overclocked 760 off a quality ~450w unit if you use a Molex to PCI power adapter and don't use other parts that are outrageously power-hungry. you would need the adapter because most 450w units come with one 6-pin connector.

i thnk the best thing to do is get a 550 watt
