I got a iPhone 5s today its really fast IMO coming from an iphone 4 user or should I not jailbreak it?

Jail breaking does NOT slowdown your device. It never has. And especially won't with the 5s processor

Im pretty sure it doesnt there was a exploit on the iphone to get credentials but it was patched QUICKLY.

If you're asking about your backup then we don't know. You have to enable it which you might or might not have don't while activating it.
Backup before a jailbreak always.
1.backup your 5s
2.jailbreak it
3.restore from previous backup
4.enjoy your soon to be pimped out device

If you got it 3 hours ago you're probably only iOs 7.1, as of now there are no jailbreaks out for 7.1. Except for a tethered jailbreak for iPhone 4's only.

I wouldn't do it, at the end of the day it's going to make your phone a whole lot slower.
