I just plugged my phone in and it said there is a new version available for IOS(7.1)

Will I have to jailbreak it again to do so?

You wont only lose your jailbreak but you wont be able to jailbreak your phone again since there isn't a public 7.1 jailbreak.

Step 1: Download "OpenSSH" from cydia.

Step 2: Download [ Register or Signin to view external links. ] On your PC.

Step 3: Plug your iDevice in.

Step 4: Semi-Restore!

My phone has just updated itself to 7.1 and there's no jailbreak for it so i'm screwed.

Unless it has been jailbroke before you cannot downgrade it, and also there isnt a jailbreak for 7.1 yet so down update, because you will loose your jailbreak and Evasi0n has stated it might be awhile until they make a new one
