Im trying to do the last challenge which is kill jimmy jenkins ive tried farming wild preserve in the cardboard boxes and cant find him and ive tried opportunity so is there something im not doing right as i cant seem to find him ive tried solo and coop but no luck

Jimmy is a tricky little bugger, it took me around 4 hours of farming in opportunity to finally find him when I was looking for him. Just keep at it, he will show up at one point or another. His spawn rate is fairly low, so it'll take a while.

Make sure you have Doctors Orders active and farm the four boxes by Bloodwing. Its the fastest and easiest way if you ask me.
