I have just upgraded from iOS7 to iOS8 Beta 3 and my photo albums no longer contains the "Camera Roll" Album, containing ALL the photos on my phone. Is there a way to get it back?

I suggest you downgrade back to IOS 7.1.2, I don't see the point of Having IOS 8 anyway... Theres not that much difference. I would recommend you download a PC or mac program to check your internal memory to copy the photos to your computer and try re-syncing the photos back onto your phone!

I am not downgrading, because I like the predictive text and I have all my photos on my computer but I want them as part of an album where I can actually delete them from my phone, on the phone.

Have you tried re-booting your iDevice ?
Perhaps maybe you will have to reinstall a fresh version of IOS 8 Beta 3, and restore from a backup

Did another quick search, turns out Apple removed the Camera Roll in iOS8, guess I will have to get used to collections.
