I'd would have to say law enforcement is where my taste is at.

I'd love to be a medical/scientific illustrator.
Although the job has lost some of it's value now that there are easier ways of mapping the human body, and the anatomies of animals, there is still a certain appeal about the near surgical precision needed to do the job properly with nothing more than a sharp pencil and a piece of paper.
