Can i install disk 2 via xex menu then on the loading screen for gta when it asks me too install disk one can i just install normally as you would on a retail? thanks

No, you have to install disk 1 other then that, take the content folder from disk 1 of gta, and place that file in the content folder on the root of you hdd, there are much tutorials on youtube for installed 2 disk games, hope i helped
