I currently have a 1tb had and a 250gb ssd is there anyway I could add space to the ssd by adding another ssd in raid0 config while keeping the data on the hard drive.

You can always add more HDD/SSD space, However I wouldn't recommend a raid 0 array because it isn't the most reliable. Yes, it's super fast but is it worth the risk of losing all the data on the SSD's?

If there's important data on the SSD, you can easily back it up to mechanical storage. SSDs are extremely reliable and I would have no qualms about using them in striped RAID.

You cannot create a RAID arraw without a format, so you could create an image of the installation on the SSD, store it somewhere else, create the array, then restore the image to the RAID volume and extend it. It may just be preferable to start with a clean install.
