Okay so I heard that if you change your region to Australia I will be able I play the game early Sunday morning? Can I still do this if I've already brought the game from the UK store? Like I already have the game installed on my XB1.

No that won't work it works from the store you have PURCHASED it from.

Most keys have some form of region limitation
For example Russian keys work in Russia.
Global keys near always exclude Australia as they get there own more expensive version hence you have you buy an Australian key to download the Australian version.
