If I go on the Xbox Store later, will I be able to buy and download the day zero without preordering? I'm from the UK and feel this will be the only way I can get it today

Yes, 202020020202. Or wait till 12pm and buy the normal edition but as you say 'play today' would be the day zero edition download.

You're honestly better off just getting the standard edition. The download takes pretty long unless you're download speed is around 10 mb/s. It'll take around 10-12 hours to download.

Im downloading mine Atm and its done 42% in 33 minutes i have download speend of 46mbs
