So let me tell you the basics real quick I am on an iPhone 4S running iOS 7.04. Now I am jailbroken and I need to keep iOS 7.04 because I just mainly don't want to get iOS 8 (So don't tell me to update and jailbreak.) now I was wondering how I would go about restoring without updating my phone.

well if you try and do it on the computer i dont know if you can you might have to do a google search but i believe this might work... make a back up to your computer then go unplug your phone and go to settings and Tap General, and then select Reset. Tap "Erase all Content and Settings" once its finished it should be at the slide to setup screen but dont do that, plug your phone back into the computer and it should prompt you to restore and choose the backup you just made before and after it finishes your apps should reapper soon after!! i dont know if that works i just did that awhile ago so i dont know if it works still but google is your best friend

If you didn't read I am "jailbroken" so erase all contents and settings will not work.

oh sorry its late and im tired ahha so i just skimmed over it but im sorry im not much help but i dont know if its possible but some one might know

Download an ipsw of your current version that corresponds with your device. When you press update and restore on itunes make sure you are holding shift, it will bring up a menu of your computer files and just find that ipsw file and click it

Now that i think about it they might have stopped signing versions of ios7 on itunes, worth the try though

Download the IPSW that you need from this site [ Register or Signin to view external links. ] And, then when you go to restore in iTunes...shift click on the IPSW that you want to restore to and there you go.
