which cpu is best for recording and editing on a budget between 100 - 140 GBP?

There's not necessarily a right answer, but AMD is definitely the right choice.

AMD is better for budget but Intel has better performance. Make sure you have the right motherboard though. I made that mistake haha

As I've been quoted, AMD is a horrible choice since AM3+ is dead. It has been for a long time and I seriously don't understand why people let it live on. For £140, you could easily get a decent i5, either a 4440 or 4460. It looks like you're upgrading though so we'd need to know your current specs and your budget for an upgrade. If you're building a new PC, tell us your budget. Keep in mind, whether you go with AMD or Intel, you will need a compatible motherboard.

get a nice i5k and overclock that bad Boy. Make sure you have the correct MB.
