As far as I know, it shouldn't wipe any memory unless you go to iTunes and restore it. Always make a backup before jailbreaking though.
And as for flappy bird, you can easily google an .ipa file on google of flappy bird. Then once you have it you can install it onto your device through iFile (known app from cydia). There's tons of YouTube videos I believe.

It shouldn't wipe anything my friend!
Back your stuff up though, just in case something goes wrong on you.
Good luck mate.

If you haven't already gone through the jailbreak process, here is my suggestion.
Before starting the jailbreak process I would suggest backing up and restoring via iTunes. This should eliminate any issues that you may come across had you not restored. After restoring to a clean slate do not restore your content just yet. After the restore process is complete and your device has rebooted, exit out of iTunes and open up Pangu and begin the jailbreak process. Once that has completed and your device has rebooted, open up iTunes. Once opened it should prompt you to restore your content from a backup. All of your content except for your music should begin copying unless it was purchased via iTunes. It's a pain in the ass if you have a huge library of pirated music, but not a huge problem.

No, jailbreaking will not fill up your memory.
As for wanting Flappy Bird, you would have had to already had the app on your account and then you could download it once again from your download history.
