To do this are these the steps I have to do?
1)Back my phone up on the jailbreak
2)Turn off/into dfu mode??
3)Restore to Factory
4)Update it back to latest back up
5)Done?
And my phone is like it was never jailbroken or am I missing a step?

I unjailbroke my phone so I know what to do.
Just plug your phone in to iTunes and press back up. Then restore default settings and then back it up again.
All from the computer.

Do I have to turn it off at all? or can I just leave it on.

So long as iTunes picks up your phone, I think you can leave it turned on to be honest (DFU mode just occasionally prevents iTunes throwing strange errors, you'll be fine though )

Leave it on and plug it into iTunes. Do the back up like I said and then restore default settings. It will set up like new but then you just restore it to a certain date.
