Dual channel allows two sets of data to be written at the same time so the processing of that data happens twice as fast. The result is 2 times the RAMs processing speed and therefore faster computing

You're semi-right, the bandwidth of the memory is theoretically increased. The memory controller won't actually be able to write faster than it can, and benchmarks of single vs dual channel don't actually show any big improvements. Buy whichever is cheaper.
