Hey guys i'm on ios 8.1.2 and i was wondering how do i restore my iPhone without updating because i don't want to lose my jailbreak.

You could use iLEX RAT from cydia. You can erase everything, or just cydia stuff. I recently used it myself.

There is no way to update/restore your device without losing your jailbreak. That is just part of the process.

You can download programs on Cydia that can back up your sources and things installed that ties into an iTunes backup though so that when you restore your device and then load your backup and rejailbreak, you didn't really lose anything. You can always downgrade your iPhone if it does update

They no longer sign off 8.1.2 so once you update there is no going back sadly

To be totally honest I had forgotten that you could use SemiRestore to achieve this. I actually remember hearing about it and think I have personally used it before, but had no idea it was updated for iOS 8.1.2 until reading this!
