I've seen a few posts floating around in which someone puts a Xeon in the build instead of something like an i5. I know that the i5 have good single core performance versus the Xeons with better multi-core performance for things like servers, but why put one in a gaming rig?

It depends. E3-1231 V3 is a 3.4GHz chip, 4460 is 3.2GHz. Same architecture, the Xeon just has HT so 4 cores, 8 threads as opposed to the i5's 4C/4T. Since the E3-1231 V3 is clocked higher, it will perform better than the 4460. An i5-4690k is 3.5GHz @ stock and can be overclocked to 4GHz usually fairly easily so that would out-perform the E3-1231 V3 in games that don't make use of more than 4 cores/threads. Xeon's are going to be better in editing/rendering and what not, than the i5 though. Basically, a hyperthreaded Xeon makes more sense than an i7 for some people, unless the user wants to overclock, in which case a 4690k or 4790k(if their budget allows) would be the best option. If you're not interested in overclocking but have a larger budget and can afford the Xeon over the i5 without any sacrifice elsewhere, then it'd be worth getting.

Sanctyy pretty much covered everything, just another thing The E3 Xeons ending in "5" have an IGPU,
but ones ending in "0" do not, also all E5 Xeons do not.

with Xeons you can fiddle round with it's bus speed if you wanted too.
