CPU: i5-3570k Overclocked to 4.2ghz
Ram: 8GB DDR3 1666mhz
Graphics Card: GTX 560TI OC (732mhz > 900mhz)
SSD: 250GB Samsung 850 EVO
Hard Drive: 500GB Seagate Barracuda
Could I run the game on Ultra at 1920x1080? Or what would be my best option?

Your GPU will be holding you back, the rest of the system will probably hold up fine. The game is really CPU and GPU Memory intensive, I have an i5 46590 and the game still maxes it almost everytime. I also have a 7970 ghz 3GB and still can't max the game because of how quickly the grass and extra settings eat up vram.
I think a GPU upgrade is all you really need, the rest of your system is in good shape. If you have a budget in mind, maybe we could help you find a good GPU to round out your system.

If you looking to upgrade check out AMD's latest 300 series GPUs there some pretty nice ones

Get a 970, it's the most logical option.
