Unfortunately, with cars, there is no way to say whether or not someone is likely to speed around after they get their license.

When you're talking about what is likely you're talking about probabilities. Saying that someone is going to buy a gun is one order of magnitude of probability that they will commit murder. Adding that this someone has a mental health issue is one more order of magnitude. Adding that this someone has a history of violence is another order of magnitude.
This is a simple mathematical fact.

So you can say whether or not someone trying to buy a gun is more or less likely than the average gun owner to commit murder.

Besides, if we take your logic to its natural conclusion then everyone should be able to buy guns. If we can't say who is more or less likely to commit a violent crime with their gun then why should we have background checks at all? Ted Bundy and Ed Gaines should be able to get guns under that logic.
