Does the new Xbox controller (the one with a 3.5mm input) still need an adapter or will a gaming headset fit right into it without the need for an adapter?

Headset will just fit right into it and work as a mic.
Just like the Xbox 360 controllers did.

I've only just got the Xbox one I'm not sure how headsets work

Depends on your headset but yes you should have volume.
