What are the risks of jail breaking an iphone 3G?

the only risk is something called a brick
if your iphone becomes bricked all you have to do is restore it the re-jailbreak
re-jailbreaking is the solution to almost ANY problem on a jailbroken device
it literally fixes pretty much anything
but the chances of actually bricking is very low. sometimes you get partial bricks where all you have to do it once again re-jailbreak
but sometimes jailbreaking a device will cause the ipod to not start it will just show the apple start up screen
in which case you would restore and put your info back on it

yes jailbreaking does void the warranty
but there is nothing you can do wrong, just get the program/s put it in DFU mode and let the jailbreak do its work.
After the jailbreak is done and it is on the apple start up screen let it sit over night to see if it starts up.
If it does not that means you need to restore and is what i refer to as your ipod/phone cannot hold a jailbreak(dont know if there is a term to it so i just kinda made it up)
